Tofu Cheesecake
Tofu Cheesecake

Ingredients
500g Cream Cheese, softened
1 package of Superior Natural’s Silken Tofu (tube, 260 g)
2 large eggs
1\2 cup White Sugar
1 tsp Vanilla Extract
3 tbsp Flour
Instructions
Pre-heat oven to 350 degrees.
Grease an 8 inch spring form pan with cooking spray and cover outsides with aluminum foil (prevents water from coming in from water bath during cooking).
Using a mixer, combine cream cheese, silken tofu and sugar. Add one egg at a time and mix to combine. Add vanilla extract and flour and mix.
Pour cheesecake mixture into greased pan and transfer to a deep, oven safe dish (we recommend a deep casserole dish or roasting pan). Add warm water into the dish until it reaches 1\2 way up to the cheesecake pan (this is what the foil is for).
Bake cheesecake for 1 hour. Once cheesecake has baked for an hour, turn off oven and keep cheesecake in the oven to rest for an additional 30 minutes (this helps the cheesecake set). Remove from oven and take cheesecake out of water bath and cool completely.
Once cooled, remove foil and store in the refrigerator for 2 hours prior to serving.
Optional: Serve with a drizzle of honey or chocolate syrup
