Grilled Tofu Steaks with Pesto
Serves 6
Ingredients
1 Package of Superior Natural’s Organic Extra Firm Tofu, cut into wedges
1 tbsp Garlic Powder
1 tbsp Onion Powder
1 tsp Black Pepper
1 tsp Paprika
Arugula Pesto:
1/2 cup pine nuts
1/2 cup Parmesan Cheese
2 Garlic Clove, chopped
2 cups Arugula, chopped
1/2 cup Olive Oil
1/2 tsp Salt
1/2 tsp Freshly Ground Black Pepper
Juice from 1\2 of a lemon
Instructions
For the pesto, add arugula to a food processor and pulse for a few seconds. Continue to add the rest of the ingredients to the blender, pulsing each time another ingredient is added. Set aside.
Combine all spices needed for the tofu together.
Using a paper towel, pat the tofu to remove any excess moisture. Season the tofu with the spices.
Heat a pan or stove-top grill attachment over medium heat and spray with cooking spray. Add tofu to the hot pan and cook tofu on each side until golden brown (around 5 minutes per side).
Serve hot with a side of arugula pesto.
*To save time, feel free to use store-bought basil or arugula pesto.
