Tofu Parmigiana
Serves 4
Ingredients:
1 Package of Superior Natural Organic Extra Firm Tofu (350g)
1 Jar of Marinara Sauce
2 Cups of Panko Bread Crumbs
1\3 Cup of Superior Natural Unsweetened Soy Drink
2 cups of Shredded Vegan Mozzarella Cheese
1 Tablespoon of Garlic Powder
1 Tablespoon of Onion Powder
4 Tablespoons of Olive Oil

Instructions
Pre-heat the oven to 350 degrees.
Start by slicing the tofu lengthwise into 1 inch thick slices. Pat dry with a paper towel and sprinkle both sides of the tofu with garlic and onion powder.
In a large non-stick skillet, heat oil on medium heat. While the oil is heating, dredge the tofu in the soy drink followed by bread crumbs. Make sure that all sides of the tofu are covered in bread crumbs.
Add the tofu slices to the hot oil and fry until golden brown on both sides (usually around 3-4 minutes). When the tofu is finished, transfer the slices to a few sheets of paper towel (this will help soak up excess oil).
Transfer the tofu slices onto a non-stick baking sheet. Top the tofu slices with a spoonful of sauce and top with mozzarella cheese. Bake the tofu slices in the oven for 15-20 minutes. Serve with a sprinkle of parsley and a side of pasta.
